It is inexcusably cliché to post a Hawaiian recipe for the Pro Bowl, but I’m going to do it anyway. Although, the recipe is Hawaiian-esque but not necessarily Hawaiian, so I am in the clear.
I’ve been sharing some savory recipes so I thought it was time to indulge the sweet tooth in all of us. So, throw a steak (or two) on the grill, but don’t forget to finish off the NFL season right, with this super easy recipe for a dessert on a stick.
Jenn’s Pro Bowl Pineapple Stuck-on-a-Stick
1 pineapple
1 pkg kebab wooden skewers
2 bars dark chocolate
1 cup cool whip
2 cup ricotta cheese
5 tbsp sugar
1tsp lemon juice
honey
Cut pineapple into inch or bite size cubes and put three on each skewer. Place skewers on an oiled BBQ and cook until the sugar in the fruit caramelizes and the pineapple cubes look slightly brown. Remove from BBQ and set aside. Melt the dark chocolate in the microwave for 25-30 seconds or until completely melted and place in a bowl. Drain the ricotta cheese (you can place it in a towel and squeeze out the moisture or you can drain it overnight over a cheese cloth) and put it in a food processor or blender. Add the sugar, and lemon juice. Blend until smooth. Put a scoop of the ricotta mixture or cool whip on the pineapple skewers. Top with either chocolate sauce or honey.
This recipe is definitely not limited to the ricotta cheese mixture, chocolate sauce or honey. Feel free to top the skewers with your favorite berry dessert sauce or maybe even add some nuts on top; whatever gets the game going!
